Tacos tacos tacos! When you’re losing weight they’re your best friend. They’re easy to lighten up and pack a punch of protein and veggies while tasting good. I truly love making taco recipes!

When I was working in Mexico several years ago, I fell in love with the food. But my body….yeah it fell in love with the food too and it showed it in the two sizes I creeped up while working there. Oh but the food was so good.

Looking back, I know that food was comforting for me. Filling a void. I had moved half way across the country after graduating college. While I had close friendships and hung out with the other U.S. transplants that worked at the manufacturing plant with me, it wasn’t the same as having my own friends and family nearby. So food it was!

Food fills an emotional void for many people. In my membership program framework I work with people to fill this void. I talk specifically about overcoming this because often the one-on-one weight loss clients I coach don’t realize how they’re using food to nourish a missing ingredient in their lives. It’s hard to overcome, but the key is bringing awareness to the behavior.

All that to say food is fuel and nourishment for the body, and just because you love eating a certain food doesn’t mean you have to give it up! It just means you need to find healthier versions of them! 

Ground Turkey Taco Bowls

These Meal Prep Turkey Taco Bowls made with ground turkey are hearty, nourishing and bursting with Mexican flavors! An easy, low carb recipe that doubles as lunch or dinner. They take 15 minutes to cook in one skillet. I love having only one dish to clean!

What You Need

  • Turkey Breast (or another lean meat)
  • Bell Pepper
  • Jarred Salsa
  • Homemade Taco Seasoning

Helpful Tips

Divide the meal into four meal prep containers so lunch or dinner is pre-portioned and for the week. This makes eating much easier when you don’t have to think about measuring or portioning. Serve them over shredded lettuce, greens of choice or cauliflower rice.

These turkey taco bowls are made Paleo, but if you’re not Paleo focused you can add quinoa, rice or beans to the meal for healthy carbs. While I love the premise of the Paleo diet, I often find people are not eating enough carbohydrates and they are necessary for a healthy diet.

Ingredients 

Instructions 

  • Heat a large skillet to medium heat with extra virgin olive oil. Place bell peppers in the skillet and sauté 5 minutes or until slightly tender.
  • Add the ground turkey breast with salt, pepper and homemade taco seasoning. Use a spatula to break up the meat and mix in the seasonings. Cook until the meat is browned, stirring it frequently.
  • Stir the salsa into the skillet and cook 2 to 3 minutes longer just to heat up the salsa and mix the flavors.
  • Transfer the ground turkey taco meat to meal prep containers, diving them evenly among 4 servings and filling them with lettuce, peppers, more salsa, Greek yogurt, beans or whatever you like.

  • Any ground meat can be used in the recipe, just note it may alter the nutritional values.
