Oh hey Healthy Chocolate Peanut Butter Blondes! Oozing with gooey peanut butter and chunks of dairy free chocolate in every bite.
I'm convinced peanut butter and chocolate are meant to go together. It's delicious combo that never goes out of style and it's one I can never say no to.
Lately, my salt craving has been insane. Recovering from anemia and blood loss is no joke. In June I hemorrhaged badly and my doctors sure what caused it. A few weeks and bags of chips later, I started experiencing vertigo, fatigue and an out of control craving for salt. I'm having outpatient surgery this month to hopefully figure out what's going on.

All that to say, I've had zero craving for chocolate which is not like me at all. I knew I was feeling better when I wanted some.
Now I've officially tested this recipe 3 times in the last month. The best part is they're customizable. You can sub cashew or almond butter for the peanut butter for a Paleo blonde. You can also swap the coconut sugar for maple syrup. You can even add nuts or seeds to these for added crunch. Technically, you could make a new version of these every week and never get sick of them.

Nut butter: I'm all about the healthy fats! Great for hormone health and fat metabolism. I use an all natural peanut butter from Target (just peanuts + salt). If you want to switch it up, use almond butter, cashew butter or sunflower butter for a nut free version.
Flaxseed meal: This natural source of fiber, protein and vitamins. I love adding this to my oatmeal and baked goods because it adds thickness and is what gives these bars their chewiness.
Coconut sugar: I love using coconut sugar because of it's lower glycemic response. That's a fancy way of saying it raises your blood sugar less. The unrefined kind also has a few more trace minerals and vitamins.
Almond flour: I love using almond flour to increase the protein content in baked goods. More protein equals more fullness so you tend to eat less!

Healthy Peanut Butter Chocolate Blondes
Ingredients
- 1/2 cup creamy peanut butter or cashew or almond for Paleo, I used Target brand
- 1/3 cup unsweetened almond milk 1/4 to 1/3 of a cup, I recommend starting with 1/4 then adding if the batter is too thick
- 1/2 teaspoon vanilla extract
- 1 tablespoon flax
- 2 tablespoons water
- 1 cup almond flour
- 1/4 cup coconut sugar
- 1 1/2 tablespoons coconut flour
- 1/4 teaspoon sea salt
- 1/4 cup chocolate chips dairy free
Instructions
- Preheat oven to 375 F. Prepare an 8x8 baking pan with parchment paper.
- In a small ramekin mix together the flax meal and water to make a flax egg. Set aside to thicken 2 minutes.
- Add all ingredients (including the flax egg) and omitting the chocolate chips into a food processor. Process on high until smooth.
- Transfer the batter to the prepared baking pan and spread into an even layer. Sprinkle the chocolate chips on top then gently push them into the batter with your fingers.
- Bake at 375 F 18-20 minutes. Remove from the oven and cool in the pan 15 minutes.
- Lift the bars out of the pan with the parchment paper and set on a cutting board. Slice into 12 bars. They will be gooey! Place a knife under hot water and whip before slicing will help with cutting them.
- Store in the refrigerator up to 2 weeks in an airtight container. They're best eaten out of the refrigerator!
