Who's ready for a thick and creamy oatmeal smoothie bursting with sweet apricot and cinnamon spices?!?I'm gonna go out on a limb and bet you've never had an apricot smoothie before. I think when most people have smoothies they automatically go for strawberry or blueberry flavors.
This includes me! I know, I know, it's hard to break those habits, but from time to time it's good to mix things up with other fruits and flavors, and I have to admit I'm kind of obsessed with apricot right now. So what better to do than to put them in a smoothie?
I found frozen apricots at Whole Foods a few weeks ago. Admittedly, it's not a fruit I normally buy or eat so when I saw them, they immediately caught my attention. By the way, if you can't find apricots frozen you can always use a fresh apricot for the recipe, blend the ingredients together and freeze overnight.
The overnight part is optional as well, but highly recommended! Letting it sit overnight makes the smoothie extra thick and creamy because the gluten free oats, flaxseed and milk mingle overnight. By morning, it becomes a lusciously sweet apricot smoothie that's perfect to wake up to and great to run out the door with. It's like having ice cream for breakfast!
An eating tip -> use a spoon or a thin straw to sip on it. That way you can savor the flavors for hours. There's something blissful about sipping on a deliciously sweet smoothie for a really long time. It's all about making the experience last longer. Seriously, it's life changing!

Apricot Cinnamon Oat Smoothie
Ingredients
- 1/4 cup Gluten Free rolled oats
- 1/2 cup Greek yogurt
- 1 cup apricots
- 1 tablespoon flaxseed ground
- 1 teaspoon cinnamon
- 2-3 tablespoons almond milk unsweetened
- 1 handful ice
Instructions
- Add all ingredients to a blender and blend on high until smoothie.
- Transfer to a glass and enjoy!

Love the apricot-cinnamon combo! It's the perfect bridge between summer (smoothie!) and fall (warm spices!). And I agree -- eating a smoothie with a spoon just makes it seem like more of a "meal."

The way you describe this sounds so dreamy; I love that you put the apricots with oats in an overnight smoothie. Smoothies with oats are surprisingly the BEST kind of creamy, delicious, doughy smoothies.
