Happy Friday Friends! I survived another week!!! What are you doing to kick off your weekend? I am getting ready for another half marathon race this Sunday, but I've been distracted by work the last two weeks so feeling the pressure to get it together now.
I'm an IT consultant by day and blogger the rest of the time. The most rewarding part of my day job is helping clients solve complex business problems & guiding them through transformations. The worse part of my job is I am never in control of my destiny. Where will I travel to next? What client will I be assigned? Will I fit in with the team dynamic? Will the team be respectful of my workout schedule & healthy eating habits? The only way I can describe it is to say it's like you're starting a new job all the time. These last two weeks my destiny was a little uncertain. I can't go into all the details, but I'm happy to tell you that things worked out late last night & I am sticking with my client for the year...woohoo! Now that work is settled, I can focus on prepping for my half marathon race this Sunday.
This morning I let myself sleep in then went to the gym and did some leg training & stair master. I almost jumped into a step aerobics class. Something I have learned about races is to not to try new fitness right before a race. It's best to do something you're body is accustomed to. You don't want to risk injury or soreness pre-race. After the gym, I fueled up with a kitchen sink omelette - two egg whites with spinach, a bit of cauliflower, a toss of chopped bell red pepper & drizzled with my fav hot sauce Sriracha and...voila kitchen sink omelette! Whatever veggies I have left in the fridge from the week, I toss into my weekend eggs. It's an awesome way to sneak veggies into your diet!
Random thought - did you know you should have a protein snack within 30 minutes of fitness? It helps with muscle repair. Muscle fibers break down from working out. Eating protein helps rebuild muscles post workout. Examples of my protein snacks: 2 egg whites, humus & veggies, greek yogurt or an apple with peanut butter.
After inhaling my kitchen sink omelette, Mom & I headed to the expo to pick up my race gear. We scored serious grub while we were there too! If you haven't been to a race expo before, I recommend you check one out. They always offer free samples and it's a good way to test new products. My Mom was amazed by it and my best friend Suzanne reacted the same way last year when I brought her. No need to be a racer to browse an expo - it's free & open to the public.

After our race expo fun, we had dinner at True Food Kitchen. I've heard it's amazing & been wanting to go there since moving to Phoenix last summer. The menu is eclectic & spontaneous. We shared a vegetable crudités served with humus, tzatziki sauce (greek yogurt & cucumber) & black olive tapenade.

Mom had the butternut squash pizza and I had the quinoa burger with kale salad & sweet potatoes. The food was incredible, the presentation was gorgeous & atmosphere relaxing. I will definitely be back especially for those crudités!

Loved the food at the restaurant. Waitress said they are inspired by Dr. Andrew Weil healthy eating concepts. Refreshing!
