Here we are with another delicious recipe! This one's a spin on my ground turkey spaghetti recipe. I love making that recipe! It's so EASY and tastes amazing! I get compliments on it all the time so it's only right that I make a cousin recipe to go along with it - a healthy bolognese with ground turkey!

I'm making this recipe with zucchini noodles, but this healthy turkey bolognese can be served with any pasta or rice, or both for a delicious and healthy dinner recipe!

Buying a spiralizer has been one of the best kitchen gadgets I've ever gotten. It's been a fun way to jazz up vegetables and make them feel more fun to eat.

Making this ground turkey bolognese with zucchini noodles is simple to make. In fact, it only took me 15-minutes to make this meal from prep to plate. What more could you ask for in a hearty, filling meal? Very important when you're prepping lots of food on the weekend, right?

This easy turkey bolognese takes simple ingredients and transforms them into an amazing meal.

It gives the sauce an amazing, tangy flavor. If you use wine, use one that you would drink. That ensures you'll love the taste! The alcohol really does give this sauce an amazing flavor so if you're skeptical, give it a whirl.

Now let's get meal prepping! Make sure you have your meal prep containers ready to go.

Ingredients

  • 1 lb extra lean ground turkey breast or ground meat of choice
  • 3 zucchini spiralized
  • 1 tablespoon extra virgin olive oil
  • 3 tablespoons minced garlic
  • 1/2 cup white onion diced
  • 2/3 cup artichokes in water drained & quartered
  • 28 ounce tomatoes
  • 6 ounce tomato paste
  • 1/4 cup red wine
  • 1 bay leaf
  • 1 1/2 tablespoons Italian seasoning
  • Salt & pepper to taste

Instructions

  • Heat a large skillet to medium heat. Add extra virgin olive oil, minced garlic and onion. Stir them together and sauté 2-3 minutes until the onions are tender.
  • Add the ground turkey breast. Using a spatula, break up the meat as it cooks. Once it starts to brown, add the red wine. Stir and scrape any bits off the bottom of the pan.
  • Add salt, pepper, bay leaf, Italian seasoning, diced tomatoes and tomato paste. Stir to combine.
  • Bring to a boil then immediately reduce to a simmer and cover for 10 minutes.
  • Once the sauce has thickened, stir in the artichokes and remove the bay leaf.
  • Portion the zucchini noodles into 4 meal prep containers and top with the meat sauce.

Notes

  • For a non-alcoholic version, replace with low sodium broth.
  • 1 serving is approximately 1 1/2 cups. It makes a lot!
