Before I bought an Instant Pot, I made shredded chicken in my slow cooker. The only problem is that doesn’t work when you’re in a jam for time. Also, with the Instant Pot you can cook chicken frozen. Life changing!

Instant Pot Low Calorie Chicken

Ingredients 

Instructions 

  • Place all ingredients in an Instant Pot. Close the lid and set valve to sealing. Set to "protein" or "pressure cook" and set to 20 minutes.
  • Release the pressure by turning the valve to "release" then remove the lid once the steam has stopped coming out of the valve.
  • Using two forks, shed the chicken. Transfer to meal prep containers or store in the fridge for easy lunches or weeknight meals.

  • 1 serving is about 1 cup.
