You guys, it's almost St. Patrick's Day. I'm a quarter Irish so rest assured my mother will be texting me Thursday asking if I'm wearing green. Some things never change. Since St. Patty's Day is a very green day, I have a VERY GREEN recipe for you! Not to mention, spring is just a few short days away (how's that even possible?) and there's nothing better than a Classic Green Juice to celebrate spring, the luck of the Irish or luck of whatever you may be!

While I don't technically celebrate St. Patricks Day anymore, there was a time when St. Patrick's Day was the biggest celebration day of the year. I remember in college getting up at 6 a.m. to bar hop with the roomies. We'd drink green beer all day and eat whatever other weird green food we could get our hands on and someone we would go to class in between. Fun times!

But WOW. There's no way I could live that way anymore. Now my idea of fun is getting up early for a good 5 a.m. workout. Life sure has changed!

Sometimes I look back at that time in my life and wonder how I ever crawled out of a grave of unhealthy habits and came around to healthy living. Like many people, I had my share of ups and downs with eating well, working out and balancing a healthy lifestyle.

In many ways, I feel lucky for having been able to experience both sides. So while I'm not out celebrating with green beer and green food this St. Patrick's Day, I'm celebrating my good fortune with a Green Juice!

Now I love a good smoothie, but there's just something magical about a vibrant Green Juice. It's like I can feel the minerals and vitamins filtering through my body when I drink it. I get a little bit giddy every time I turn on my juicer and make one because I know I have a good hour of glorious juice sipping ahead of me!

Now. I know you're sitting there thinking "but I don't have a juicer." Well, I get it. I didn't have one for a long time either. I already had more kitchen gadgets than I can count on two hands. Eventually I realized  it was an investment for my health, no different than owning a blender and you can get them now for very reasonable (I have this one).

A Green Juice is also one of my sneaky tricks for eating less sugar. You know when 2 p.m. rolls around and you're like give me all the cookies? Yeah, those days are long gone. I've caught onto you cookie monster! Now I simply make a Green Juice and BAM!!! Cookie monster no more!

This Green Juice is a classic. It's one I make most often. I do vary the ingredients from time to time. Sometimes I'll throw in a cucumber or substitute kale for the spinach, but for the most part I stick to the same recipe. It's layered with citrus and spice flavors with an ounce of tang. It's also silky, sweet, and oh yeah, NUTRITIOUS!

Ingredients
 
 

  • 2 oranges
  • 1 apple
  • 1 lime
  • 3 cups fresh spinach
  • 1/2 cup fresh parsley
  • 1 tablespoon ginger root
  • 1-2 cups ice for chilling

Instructions
 

  • Place all ingredients in a juicer and blend. Add the juice to a glass with ice and enjoy!

    I was so not crazy in college, it was more like 27 when I went a little crazy. And I loved the St. Patty's bar crawl, such great people watching! But I'm most certainly more of a green juice than green beer girl. Dave won't let me buy any more kitchen appliances without giving up one I have because we are overly cramped in this tiny kitchen. Maybe I can store it in the dining room, because I really want to make juice everyday!!

    you are so right! whenever i make a green juice, the sugar cravings go away. It's crazy! fight the cookie monster. ahah love it

    I love green. It makes me so happy. The river here in Chicago is still my favorite shade of green and I've been trying to walk by it as much as I can!
