These Low Carb Pancakes made with nut butter are bursting with creamy, nutty flavors and are fluffy and delicious. This is what pancakes dreams are made of!

I don’t know why I bother planning because it seems like when I do, the universe pulls the rug out from under me. Last week my doctor’s office called saying they needed to reschedule my hip replacement surgery. Seemed odd to me a doctor needs to reschedule a surgery that’s only two weeks out, but whatever.
Then they tell me, he can do it early next week. Me, I was like fine let’s do it. Then I started looking at my list of what needs to get done before surgery and had an anxiety attack. Actually, I had four. I spent all day Thursday morning crying freaking out about how I’m supposed to go through this massive surgery and keeping everything I’m doing somehow going.

The biggest problem is school. My course work this month is ridiculous. I haven’t been able to get anything done. One course in particular, is really two courses and it’s annoying busy work that’s holly hell time consuming. Most nights I don’t eat dinner because I’m trying so hard to work ahead.
Then there’s the problem of school being not providing me with my September assignments, which they agreed to provide August 1st so I could work ahead. Well, it’s the 3rd week of August and I have yet to see them. Not that I would have time to work on them, but it would nice to see what I’m in for.

Needless to say, it’s been a rough couple days working through this in my head and not having someone to talk to. Being single isn’t always cosmos and heals.
Once I pulled myself together, I realized delaying surgery until the end of September was the right thing to do. I’ve waited 18 years for it what’s another month? Plus I can’t go into this like a stressed out maniac. My body needs to be in a good place for surgery. Truthfully I would like to never have to go through with it, but that’s not an option. Maybe the universe knows better than me. “We’ll see.” Says the zen master.
But I know one thing the universe doesn’t know anything about. Pancakes! They cheered me up when I was down last week and I’m hoping they do the same for you. They’re definitely a batch you don’t want to miss!

Made flourless with Greek yogurt and cashew butter they have a silky, creamy, melt-in-your-mouth texture with nutty flavors and a chia seed crunch. They make some seriously thick and hearty pancakes!
You also get a hefty dose of protein and omega-3’s with these Cashew Chia Pancakes. Cashews are a good source of iron and magnesium (as well as vitamins B6, E & K). Those minerals are ones a lot of people are deficient in so not only do they taste great, but they’re doing great things for your body too. Now that’s how you kick some universe butt.

Low Carb Pancakes
Ingredients
- 1 egg white
- 1 tablespoon chia seeds
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ½ teaspoon almond or vanilla extract
- 1 cup cashew butter, or any nut butter will work
- ¼ cup cashew milk, or your milk of choice
- ⅛ cup Greek yogurt, plain
Instructions
- Preheat a an electric skillet to medium heat.
- Add all ingredients to a blender or food processor then blend until fully combined.
- Ladle batter onto skillet with a 1/4 cup measuring cup to form pancakes.
- Cook pancakes 5 minutes until the sides begin to setup. Note, these take a little longer than regular pancakes to setup.
- Flip pancakes and cook another 3-5 minutes until brown.
- Transfer to a wire cooling rack to cool while the other pancakes cook.

Sounds like a good plan that you put it off, especially with all the anxiety it was causing you. Now you can breathe a little easier. I’m sure you can’t wait to have it all done! If I were closer I would help you out and eat all your food.

I’m sorry to hear you have this added stress in your life right now. But you are so right, pancakes seriously make everything a little bit better. I like making a nice brunch on Sundays and love cashew butter with my stack so I will definitely give this recipe a try!

It does feel sometimes like everything falls on your shoulders at once. I imagine that’s expected. I’m freeing up my time in other ways too so hopefully that will get me better prepared.

Great minds think alike, I have pancakes on the horizon too, these look divine! Sorry, your surgery got delayed, I strongly believe that the universe takes care of us in ways we will never understand. You never know what the next 6 weeks has in store for you. Your right you shouldn’t have to go through this, but I can’t wait to go hiking and all things fitness with you when your recovered!
I feel like there will never be a right time to do this. But would like to feel a little more prepared going into it. Very frustrated with my school right now too!

I”m sorry that you are feeling so overwhelmed. Believe me I understand. I wish you wouldn’t have to put off your surgery, but if you are feeling ok with doing that and it will alleviate some of the stressors, then you might just need to.
