This Cantaloupe Mint Citrus Smoothie is bursting with orange, citrus and vibrant mint flavors. The perfect HEALTHY light refresher for a hot day!

Well, I survived a marathon week of homework. Completing two weeks of homework in one week is no joke. I'm relieved it's over! 

I'm hoping I can kick back the next two weeks and work on odds and ends without any surprises. It seems like I'm being struck by something these days.

In other news, I'm a little worried about my knee. It started hurting last week when it got extremely humid and rainy.

Monsoon season has officially arrived in the desert! It was so humid it felt like a tropical rain forest. This is not the time of year to visit Arizona. In case you were wondering.

If you've been following my story for awhile, then you know last year I was in a car accident and have had years of unexplained health problems.

By the way, it will be one year tomorrow since the accident. I can't believe it's already been a year since that life changing day. Crazy how time flies.

Now that I'm having this achy pain in my knee, I'm freaking out internally about it, secretly praying it's arthritis.

I just need to make it to the end of August so I can have hip surgery, and I'm pretty sure I'll go into a deep depression if I have another injury at this point.

So this weekend I'll be kicking back, trying not to worry, marathon watching the Housewives of Orange County and NYC while I sip away on a Cantaloupe Mint Citrus Smoothie trying to stay cool in the tropical desert.

It's the same base recipe with the addition of cantaloupe, lemon and mint, and let me warn you it's ridiculously good.

You won't want to share. Light, sweet and perfectly refreshing. If you're looking to cool off this week, this smoothie's got your name on it!

Ingredients
 
 

  • 2 cups cantaloupe cut
  • 1 cup orange juice no sugar added (I use Evolution OJ)
  • ½ orange frozen 10 minutes
  • 2 lemons juiced
  • 1 teaspoon vanilla extract
  • 5 mint leaves
  • 2 handfuls of ice

Instructions
 

  • Place all ingredients in a blender or food processor and blend until smooth. 
  • Serve immediately & enjoy immediately!

    bleh - homework!!! it's been a hot minute since i've said that i've had to do that. this smoothie looks great, the combination of cantaloupe and mint sounds lethal. pinning!
