Muffin Monday! I try to remember to do a muffin Monday at least once a month, but it doesn’t always happen. That is life so I hope you’ll forgive me because I’m not perfect, and frankly I’m tired of trying to be which leads me to…. perfection!

So here’s the skinny. I have been a type A personality my entire life. I always feel like I have to do things exactly right the way they are in my brain. A few years ago, I finally started thinking about why I am this way. What was my goal of always trying to be perfect?

I realized I wasn’t doing it for me. I was always doing it for someone else. To impress my parents, a friend, co-workers, etc. Here I was working my butt off so hard {like in corporate america}, but it was never for me. Crazy, right?

Funny thing is it was my 80 pound weight loss that made me realize this. When I did, everything in my life changed. I finally let go of trying to impress other people with having the perfect outfit, perfect car, perfect job, perfect appearance of having all my sh*t together.

Bottom line. If I’m not happy then what’s the point?

Once I let go of the trying to perfect, the weight came off and I started doing things that filled me up inside. I made me a priority. Suddenly, eating better foods and physical activity were things that filled me up more than a pair of shoes or new outfit.

I think a lot of times people turn to food to fill themselves up when in fact, maybe, just maybe if they let go of trying to be so perfect all the time they would discover healthy living naturally and lose weight without trying too hard.

Ingredients 

Instructions 

  • Preheat oven to 350 F. Prepare a muffin tin by spraying with cooking spray or lining with muffin liners.
  • In a large mixing bowl, whisk together the eggs, milk, maple syrup, extract and salt until bubbly.
  • In a separate bowl, mix together the coconut flour, turmeric, ginger and baking soda.
  • Fold half the dry ingredients into the wet ingredients to combine then fold the remaining half and combine. Transfer the batter to the muffin tin by dividing it evenly into 8 cavities.
  • Bake at 350 F for 25 minutes or until golden brown and a toothpick can be removed clean. Remove from the oven and transfer to a wire baking rack to cool a few minutes before serving.

    Hi! Is there a way to make these without maple syrup? Suggestion for a low sugar substitute?

      You could try liquid stevia. I haven’t tried it so I’m not sure what the taste/consistency will be like. Let me know if you do so I can update the recipe card for others!

    I’ve been scared to try golden milk because it kind of grosses me out. BUT, I have a giant container of turmeric in my pantry from Costco, so I think these muffins are the answer! I’d much rather eat my golden milk in the form of a muffin rather than drink it. ๐Ÿ™‚

    And yeah…chasing perfection is no fun!

      Yeah, I feel the same as you about golden milk. But I have no problem sticking it in baked goods so you must try. No turmeric-y taste at all.
