Preheat oven to 350 F. Prepare a muffin tin by spraying with cooking spray or lining with muffin liners.
In a large mixing bowl, whisk together the eggs, milk, maple syrup, extract and salt until bubbly.
In a separate bowl, mix together the coconut flour, turmeric, ginger and baking soda.
Fold half the dry ingredients into the wet ingredients to combine then fold the remaining half and combine. Transfer the batter to the muffin tin by dividing it evenly into 8 cavities.
Bake at 350 F for 25 minutes or until golden brown and a toothpick can be removed clean. Remove from the oven and transfer to a wire baking rack to cool a few minutes before serving.
