Hi Guys! Hope you had a great holiday yesterday, good food, lots of rest and continuing the festivities through the weekend.

I hope Santa was also good to you too. Last weekend when they arrived in at Audi I thought my dreams came true and she bought me a new car, but no such luck. It was the rental. They got a nice upgrade. That means no upgrade for me. Womp..womp… The good news is I can test it out while she’s here the next month to see if I like it without having to deal with a pushy car salesman.

Peanut Butter Hot Chocolate

Besides gifts, our Christmas was filled with laughter and delicious food. My parents are like watching a comedy show. On Christmas Eve, my Mom had my Dad convinced she bought him a Christmas present. They told each other previously they weren’t exchanging gifts this year. Of course, my Dad got worried when Mom started messing with him.

She’s kinda sneaky and has bought things in the past when she said she wasn’t going to. This year Dad got her a card and snuck money in it just in case she surprised him. It was hysterical. I can’t even do it justice.

After yesterday’s fun, I’ll be sending today relaxing. Other than swimming and weight lifting, I won’t be hitting up the stores for after Christmas shopping today. Mom’s already got a plan of the stores she “needs” to go to and as much as I’d love to tag along I know I’d better be good to this ankle and take it easy today.

Yesterday I cooked all day and Christmas Eve I did a lot of running around with physical therapy, last minute errands, cookie baking and an unexpected trip to the Apple store because my MAC keyboard died. As far as I’m concerned, today is my Christmas. So I’m kicking back, finishing blog work and watching movies.

Then I’ll be whipping up more homemade peanut butter hot chocolate and a batch of my peanut butter chocolate granola bars.

  • In a small pot, add all ingredients and bring to medium heat 5 minutes.
  • Whisk together the ingredients until fully incorporated and steaming hot. Serve, add optional toppings and enjoy!

    Friendly FYI! Marshmallows normally are made with gelatin (by-product of the meat industry). Make sure to read the label and buy vegan marshmallows. 🙂
