Easy Tomato Cucumber Salad

A light and crisp Tomato Cucumber Salad is the perfect thing to cool off with on a hot summer day. It’s made with only three ingredients and my favorite homemade Healthy Italian Dressing.

The vegetables marinade in the dressing and this is what makes this Tomato Cucumber Salad taste oh soooo good. Definitely don’t leave it out! The dressing is super simple to make too friends.

What You Need

  • Cucumber
  • Grape or Cherry Tomatoes
  • Red Onion
  • Homemade Italian Dressing

How To Make A Italian Dressing for a Cucumber Salad

Slice up the veggies and toss in a large mixing bowl then shake up the ingredients for the dressing in a glass jar and pour it over the salad. Let it marinade in the refrigerator 1 hour then serve!

You can serve it immediately, but I believe chilling makes it 100% so much better!

Italian Tomato Cucumber Salad is a low calorie salad with Italian dressing. Simply toss together, chill and serve! Great as a side salad, snack or appetizer.

Ingredients 

  • 2 cups cucumber, sliced
  • 1 cup red onion, sliced
  • 1 cup grape tomatoes, sliced
  • 1 Italian Dressing

Instructions 

  • Slice the vegetables and add to a large mixing bowl.
  • Make the low-calorie Italian dressing according to the recipe directions, then pour over the vegetables in the mixing bowl.
  • Marinade the salad in the refrigerator for 1 hour then serve! Store in the refrigerator up to 7 days.
