This recipe for Healthy Enchilada Sauce recipe has become a favorite in my house! I didn’t know how much I loved enchilada sauce until I made my own. It’s the best!

I’ve always been a sucker for spicy foods. In fact, there was a time when I was living in Mexico and eating a ton of spicy foods and my stomach wasn’t having any of it. I was on Nexium for years. My doctor told me to stay away from spicy foods, but what she should have told me was to change my diet.

Generally, when people have acid reflux it’s due to inflammation in the gut contributed by eating too many processed foods. Once you remove those foods and change your diet, the inflammation will go down. Unfortunately, most doctors are quick to push the meds before suggesting a dietary change.

That’s what happened to me at that time in my life. I was eating too many unhealthy things and it greatly affected my stomach. Since losing 80 pounds and having continued eating a healthy diet, I’ve had no acid reflux issues. Thank goodness because those meds were horrible!

Healthy Enchilada Sauce

Ingredients 

Instructions 

  • Place all ingredients in a saucepan and bring to a medium heat. Let the ingredients simmer together 2 minutes until it bubbles then reduce the heat to low and cover. 
  • Let the ingredients simmer at a low heat for 8 minutes. The sauce will begin to thicken. Turn off the heat, test the salt and pepper. Add more to your liking if needed. 
  • Cool the sauce in the pan then transfer to a mason jar and store in the refrigerator up to 2 weeks and heat up an use as needed, or enjoy cold.
