I've been excited to share this one with you. It's one of my favorites, a lighter and gluten free recipe that's always a crowd favorite and using Open Nature® Air Chilled Boneless Skinless Chicken Breasts from Albertsons yields a fantastic chicken flavor.
Air chilled chicken is cooled by air as opposed to water, so all the natural juices and flavors are not diluted, making the meat more tender and flavorful.
Healthy Crockpot Chipotle Chicken
This easy shredded chicken recipe is made in the convenience of your slow cooker with a smoky and tangy chipotle in adobo-orange sauce. Deep with delicious flavors and minimal prep with just 6 ingredients. Sign me up!
I pop into Albertsons frequently after teaching cycle classes. It's less than a mile from the gym making it super convenient! I prefer going there because it's big and I know I can always find high quality yet affordable products there, like Open Nature® and O Organics® brands!
What You Need
- Open Nature® Air Chilled Boneless Skinless Chicken Breasts
- Chipotle Peppers in Adobo Sauce
- Oranges
- Chicken Broth
- Extra Virgin Olive Oil
- Garlic Powder
- Salt + Pepper
- Cilantro (optional)
I used garlic powder and freshly squeezed orange juice to balance out the smoky flavor of the chipotle peppers in this recipe. Don't worry, chipotle peppers are not spicy. In fact, the heat is very mild, but the flavor is on point!
That's the point of having great chicken, right? Great flavor!
How to serve your shredded chicken
Top it on a salad or greens, sandwich bread, a gluten free bun, to a bowl of veggies or even add it to tacos. The options are endless for what you can do with this chicken recipe!

What is compostable
I'm sure you've heard the term biodegradable, but maybe not compostable. While all compostable material is biodegradable, not all biodegradable material is compostable.
Compostable means a product is capable of breaking down into natural elements. When they break down, they release valuable nutrients into the soil, aiding the growth of trees and plants.
Although biodegradable materials return to nature and can disappear completely, they sometimes leave behind metal residue; whereas, compostable materials do not.

Healthy Crockpot Chipotle Chicken
Ingredients
- 1 lb chicken breast I used Open Nature® Chicken Breasts Boneless Skinless Air Chilled
- 7 oz chipotle peppers with adobo sauce
- 1/4 cup chicken broth low sodium
- 1/4 cup orange juice freshly squeezed
- 1 tablespoon extra virgin olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1/4 cup cilantro leaves roughly chopped
Instructions
- Place the chipotle peppers with the sauce in a blender along with the chicken broth, orange juice, extra virgin olive oil and garlic pepper. Blend on high until smooth.
- Place the chicken breasts in a slow cooker then pour the chipotle sauce over the chicken and add the salt and pepper.
- Cook for 3 1/2 hours on high then using two forks shred the chicken. It will pull apart easily from the cooking.
- Serve over a salad, in a bowl, in a sandwich or in tacos. Store in the refrigerator up to 5 days.

So easy so good!! I’ve made it with breasts and thighs before and wow the thighs come out so so tender! Excellent weeknight meal that makes my picky husband so happy! I’ve used this recipe half a dozen times already! I like to use cara cara oranges for this and wow!!!

If I could give this more stars I would. Phenomenal flavor and so incredibly easy. The only difference is I used air chilled chicken tenderloins because that is what I had and I did not want to go to the store. I cooked a little less time to compensate for this change. Outstanding taste and texture. This is going into the rotation!!
