Whip up a 3-ingredient single-serve protein cookie in just 3 minutes using the microwave. It’s packed with protein and fiber but is also rich and chocolatey.
To a bowl, add almond butter, protein powder and almond milk. Stir together until the batter becomes thick and doughy. Add more milk if needed, but 3 tbsp should be plenty.
Spray a 6-ounce ramekin with cooking spray and set aside. Add the mixture to the bowl.
Microwave 1 minute on high or until set then top with optional toppings and devour!
Notes
The texture of the cookie dough should be thick and scoopable to ensure it cooks properly.
A ramekin or small bowl is best for this cookie so it cooks through and isn’t raw in the middle.
After 30 seconds in the microwave, be sure to check your cookie regularly so it doesn’t overcook.
You can optionally add vanilla extract to the batter and sweetener. The protein powder I use has stevia already so I did not use any.
