Preheat oven to 350 F. Spray a round baking dish with cooking spray.
In a large bowl, whisk together the eggs and milk. Then stir in the pizza sauce, onion powder, garlic powder, red pepper flakes, basil and spinach until smooth.
Transfer to the baking dish. Top with sliced mushrooms and pepperoni.
Bake 25-30 minutes or until the center is set.
Remove from the oven and cool in the pan 10 minutes before slicing into 8 pieces. Keep leftovers in the refrigerator up to 5 days in a container.
