Greek Shrimp Salad {GF, Low Cal, Paleo}
This Greek Shrimp Salad is a light, refreshing and EASY meal. Loaded with a secret blend of spices, freshly chopped vegetables and grilled shrimp, this healthy meal is equally delicious and filling!

For the Salad:
- 1/4 lb shrimp
- 3 cups romaine lettuce chopped
- 1/2 cup cucumber diced
- 1/4 cup grape tomatoes
- 1/2 cup green bell pepper diced
- 2 tablespoons feta cheese omito for Paleo
- 1/4 teaspoon marjoram
- 1/4 teaspoon basil
- 1/2 teaspoon oregano
- Salt & pepper to taste
In a small bowl, whisk together the ingredients for the dressing and set aside.
Heat a grill pan over medium heat with cooking spray. Combine the salt and pepper and spices in a bowl and toss the shrimp in the bowl to coat. Place the shrimp on the grill pan. Cook 2-3 minutes on each side until opaque. Pro tip: remove shrimp 30 minutes from refrigerator prior to cooking.
Remove shrimp from the grill and set aside to rest while you assemble the salad.
Assemble the salad by adding all the vegetable ingredients first to a bowl. Next top with shrimp, feta and drizzle with dressing.
