For the salad
- 8 ounces broccoli slaw (coleslaw mix may be substituted)
- 1 red bell pepper diced
- 1 cup red cabbage thinly shredded
- 1/2 cup carrots shredded
- 1 cup oranges sliced
- 3 green onions thinly sliced
- 12 ounces canned chicken (in water) or 2 cups shredded chicken
In a large mixing bowl, add the broccoli slaw, sliced red cabbage, shredded carrots, red bell peppers, canned chicken, oranges and green onions. Toss together then set aside. In a separate small bowl, wisk together the ingredients for the sauce then pour over the salad. Toss well to combine. Chill 20 minutes then enjoy!
If meal prepping this salad, store the oranges and dressing separate from the salad until ready to eat.
