To a medium bowl, add nut butter, maple syrup, oat flour, lemon extract, chia seeds and roughly chopped freeze dried strawberries. Combine with a spoon until ingredients are fully blended.
Divide the mixture into 12 equal portions. Roll each portion into a bite-size ball. The batter should be squishy and stick together easily. If it doesn't, dampen your hands with water. This will be enough to help it stick together.
Place rolled bites in a container in the refrigerator 30 minutes to set. Keep in the refrigerator up to 10 days or in the freezer up to 60 days.

- Fresh strawberries will not work in the recipe. It will make the batter too wet.
