Ingredients

  • 1 egg room temperature
  • 1 cup cottage cheese I used Lactaid (for lactose intolerance)
  • 1 cup almond milk unsweetened
  • 1 tablespoon lemon juice
  • 1 1/2 cups Gluten Free rolled oats
  • 2 tablespoons coconut sugar
  • 1 tablespoon chia seeds
  • 1/2 cup raspberries
  • 2/3 cup blackberries

Instructions

  • Preheat the oven to 375 F. Prepare an 8x8 baking pan with parchment paper. Set aside. 
  • Place all ingredients except the berries into a food processor or blender and blend until smooth. 
  • Transfer to a large mixing bowl and stir in the raspberries and blackberries. Pour the batter into the prepared baking pan and spread into an even layer.
  • Bake uncovered 35-40 minutes or until slightly brown and firm. Remove the pan from the oven and cool in the pan 10 minutes before slicing into 9 bars. 
  • Store in the refrigerator up to 10 days or in the freezer up to 60 days.
