Place all ingredients in an Instant Pot. Close the lid and set valve to sealing. Set to "protein" or "pressure cook" and set to 20 minutes. Release the pressure by turning the valve to "release" then remove the lid once the steam has stopped coming out of the valve.
Using two forks, shed the chicken. Transfer to meal prep containers or store in the fridge for easy lunches or weeknight meals.
