For the Tzatziki Sauce:
- 3/4 cup Greek yogurt
- 1 cup cucumber finely diced
- 1 tablespoon garlic minced
- 1 teaspoon lemon juice
- 1/2 tablespoon parsley or dill
For the Rest:
- 2 cups grape tomatoes
- 1 cup cucumber diced
- 1 cup quinoa cooked, I used black quinoa
Place the ingredients for the chicken in an Instant Pot. If you do not have an Instant Pot, see notes for alternative cooking methods. Close the Instant Pot and turn the valve to sealing. Set it to meat (or pressure cook) and cook 30 minutes.
While the chicken cooks, prepare the tzatziki sauce by combining all ingredients together in a bowl.
Place 1/4 of the quinoa, grape tomatoes, cucumber and tzatziki in each meal prep container along with 1/4 of the chicken. Store in the refrigerator up to 5 days.
- Note, if you do have an Instant Pot, you can do this in a crockpot only it will need to cook 4-6 hours on high until chicken is tender.
- You can alternatively cook the chicken in a skillet. If you use this method, then you will need to marinade the chicken an hour then bring to room temperature, then cook in a skillet with the marinade until the chicken is cooked through.
