- 1 cup nonfat Greek yogurt I use Fage
- Homemade Taco Seasoning
- 2 roma tomatoes diced with seeds and ribs removed
- 1/2 cup black olives sliced
- 2 cups iceberg lettuce shredded
- 1/2 cup light Mexican 3 cheese blend
- Optional: sliced green onions for garnish
In a small bowl, combine the Greek yogurt with the homemade taco seasoning mixture. Stir until combined well.
With a spatula, spread the Greek yogurt mixture onto the bottom of a round 9-inch glass dish into an even layer. Top with shredded iceberg lettuce, tomatoes, cheese and black olives. Garnish with green onions as desired.
