Meal Prep Hatch Green Chile Chicken

Meal Prep Crockpot Hatch Green Chile Chicken! This simple dinner recipe is filled with spicy and smoky flavors. Serve over brown rice, lettuce or zucchini noodles for a lighter, healthier dish! Gluten Free + Low Calorie + Paleo

Instructions

  • Place all ingredients in a crockpot.
  • Set the crockpot to high and cook 3 hours until chicken is tender. You will know it's done when the chicken easily shreds with a fork. You may have to help it by pulling it apart a little.
  • Remove from the crockpot and divide among 4 meal prep containers. Add additional ingredients to the container as desired.

Notes

  • If you don't have access to Trader Joe's, you can also buy frozen hatch green chile at Walmart. Alternatively, you can make your own by blending 4 large hatch green chiles together with 1 tablespoon garlic and 1 jar of green salsa. Add the other ingredients in the recipe to make your own version!
  • Nutritional information reflects the hatch chicken only. You will need to account for veggies, rice, etc. that you add to it.
  • 1 serving equals approximately 1 heaping cup
