Preheat oven to 250 F. Prepare a large baking sheet with parchment paper.
In a large mixing bowl, whisk together the egg whites until frothy. Add the pecans and pumpkin seeds.
In a separate smaller mixing bowl, combine the seasonings and sugar then pour the sugar and spice mixture over the nuts and combine well.
Pour the nuts onto the baking sheet and spread out and into an even layer.
Bake 45 minutes then remove from the oven and cool 1 hour.
Remove from the baking sheet then store in the refrigerator in an airtight container. Store up to 7 days.
