Super Sneaky Spinach Brownies! These brownies are chewy, chocolatey, low in sugar and packed with hidden veggies. Great for picky eaters because you can't even taste it! Gluten Free + Low Calorie

  • Preheat oven to 350 F. Prepare an 8-inch x 8-inch baking pan with parchment paper. 
  • To a food processor or blender, add egg, applesauce, Greek yogurt, almond extract, spinach, sugar and salt. Blend until smooth. Note, you can also you an immersion blender for this step if you want the spinach pieces to be completed undetectable. 
  • Add the baking powder, cocoa powder and oat flour to the mix. Blend once more until smooth. 
  • Transfer the batter to the prepared baking pan then spread into a smooth layer. Sprinkle the chocolate chips over the top of the batter and gently press them in. 
  • Bake at 350 F 18-20 minutes or until the brownies are set and a toothpick can be inserted clean. 
  • Remove from the oven and let the brownies sit in the pan 10 minutes before slicing into 12 bars. 
  • Store bars in the refrigerator up to 2 weeks or in the freezer 1 month.
