Instructions

  • In a small bowl, stir together the ingredients to make the dressing then set aside.
  • Assemble the salads by placing the mixed greens in a large bowl following by the shredded chicken, sliced tomatoes then crumbled gorgonzola. Drizzle the dressing on top of the salad and devour.

Notes

  • *I buy a cooked Rotisserie chicken, remove the skin and shred the chicken from the bone ahead of time. Alternatively you could bake 1 or 2 chicken breasts with salt, pepper and garlic powder and shred to have on hand.
