Healthy Crockpot Chipotle Chicken

Ingredients

  • 1 lb chicken breast I used Open Nature® Chicken Breasts Boneless Skinless Air Chilled
  • 7 oz chipotle peppers with adobo sauce
  • 1/4 cup chicken broth low sodium
  • 1/4 cup orange juice freshly squeezed
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup cilantro leaves roughly chopped

Instructions

  • Place the chipotle peppers with the sauce in a blender along with the chicken broth, orange juice, extra virgin olive oil and garlic pepper. Blend on high until smooth.
  • Place the chicken breasts in a slow cooker then pour the chipotle sauce over the chicken and add the salt and pepper.
  • Cook for 3 1/2 hours on high then using two forks shred the chicken. It will pull apart easily from the cooking.
  • Serve over a salad, in a bowl, in a sandwich or in tacos. Store in the refrigerator up to 5 days.

Notes

  • Top it on a salad or greens, sandwich bread, a gluten free bun, to a bowl of veggies or even add it to tacos. The options are endless for what you can do with this chicken recipe!
