- 1 lb chicken breast I used Open Nature® Chicken Breasts Boneless Skinless Air Chilled
- 7 oz chipotle peppers with adobo sauce
- 1/4 cup chicken broth low sodium
- 1/4 cup orange juice freshly squeezed
- 1 tablespoon extra virgin olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1/4 cup cilantro leaves roughly chopped
Place the chipotle peppers with the sauce in a blender along with the chicken broth, orange juice, extra virgin olive oil and garlic pepper. Blend on high until smooth.
Place the chicken breasts in a slow cooker then pour the chipotle sauce over the chicken and add the salt and pepper.
Cook for 3 1/2 hours on high then using two forks shred the chicken. It will pull apart easily from the cooking.
Serve over a salad, in a bowl, in a sandwich or in tacos. Store in the refrigerator up to 5 days.
