Have you ever see that show Save My Bakery on Food Network? That’s kinda how my kitchen was last weekend. Every weekend I test a handful of new recipes. For the most part, things turn out delicious. Every now and then I’ll have a dud recipe that goes into the trash, but it’s not often. This weekend I don’t know what happened. I had not one, but two dud recipes.
Recipe 1 – Green tea pancakes. Their only saving grace were the blackberries that I threw in the batter unintentionally. They were the only good tasting part of the pancake. I swear I’m not destined to eat or make pancakes. At least they look pretty.
Recipe 2 – Vegan orange bars. These tasted good, but fell apart.
All the homemade bars I’ve made fall apart. Even some of the blogger recipes I’ve tried which is disappointing. I have yet to figure out a way to keep them from becoming tiny crumbles. I want to make homemade granola bars like these ones again. Next time I’m freeze drying.
Not all recipes turn out delicious and pretty. Two in one weekend felt like a lot! The good news is not everything was a failure this weekend. I actually made some other delicious and pretty things which will be coming to a blog near you soon.
And now for some eats.
Breakfast. Roasted brussels sprouts. I eat these like candy. I know what you’re thinking. Veggies for breakfast? Yep! Sometimes I have cravings for them in the morning after working out. I noticed my food cravings changed a few years ago when I started working out in the morning.
My Oatmeal with raspberries, mini chocolate chips & a nut butter. Pure heaven! I could eat this for every meal.
Snack. Orange Julius Knock-Off Smoothie (sans the calories and sugar). I have had serious orange cravings lately and I need more vitamin C in my diet to absorb my supplements for my iron deficiency. This smoothie is amazing!
Lunch. I was running errands and starving so I treated myself to my favorite healthy place in Phoenix, Pita Jungle. I had the Grilled Vegetable Salad. This salad is amazing! It has every vegetable under the sun. I always ask for the dressing on the side and never need it. The salad has enough flavor with the smorgasbord of veggies. Pretty sure I got my veggies for the week this day.
Dinner. Leftover shrimp & rice. This is one of my super easy low-calorie recipes. I make this a lot in the summer. It’s light and satisfying. I’ve noticed I’ve been hungrier more the first half of the day so I’ve been eating less at dinner lately.
Desert. Gluten free blueberry zucchini bread. Holly yum! No other words are needed.
