It’s a wake up call when you realize you’re not physically strong enough to do what you used to do. It’s been three weeks that I’ve been off crutches and despite being on them for three, very long months I forget I’m still recovering and can’t do what I used to yet. Funny how quickly we forgot the bad things.
Last weekend I was invited to attend the AZ Food & Wine Experience in Scottsdale and while I had a great time meeting foodie superstars like Jenn Bare from Get Crocked and Graham Elliot from Master Chef, I realized how very simple things I used to take for granted before the accident are now quite difficult. Three hours into the event, I left only to crash and burn on the couch when I got home. I keep reminding myself that I broke my leg and it’s okay to be this way. You don’t have to be strong all the time.
I’m glad I attended the event. I saw and ate a lot of really good food, had some morning bubbly and met several local bloggers including this awesome lady. I’m seriously obsessed with her work. She is the queen of chic DIY. Also, seeing those infamous Graham Elliot glasses was worth it! I couldn’t stop staring at them and was taken off guard when he asked me if I had questions. Everyone was asking about food. I secretly wanted to ask about the glasses.
Speaking of food, let’s see my food! If you’re new to Skinny Fitalicious, What I Ate Wednesday is a post I do every week showcasing my meals from one day. It’s fun to see what other people eat in a day. It’s also great motivation for me to eat balanced and create more delicious recipes!
Breakfast. Bringing back a winter favorite. Truffled egg whites, plantains and homemade blender salsa. Oh, plantains how I’ve missed you!
Lunch. Hasn’t been happening much because I have become a snackaholic. I’m not sure what’s up with that, but I’m giving myself permission to roll with it for now.
Snack. Cottage cheese with frozen strawberries. Have you tried this? It’s really good!
Dinner. Leftover harvest skillet lentils. I could eat this for breakfast, lunch and dinner!
Snacks. Apple with NuttZo peanut butter, heavy on the peanut butter. Remember you get 15% discount if you order online using my code olson15. NuttZo would be a great holiday gift!
Are you holiday shopping yet? What’s happened to you recently that’s been humbling?
