Happy Wednesday Friends!
When you’re recovery from an injury, you have good days and you have bad days. Last week I was feeling good until the weekend hit and then I did not feel well at all. My head was hurting bad. Concussion pain is a strange kind of pain. It’s not a headache, but more like a throbbing pain in the back of my head. It eventually leads to dizziness if I don’t stop what I’m doing and lay down. I don’t remember doing anything that caused it to come on, but I was fairly stressed last week about insurance and medical stuff. The whole insurance thing is crazy. They look for anyway to get out of covering you. I think even if you were dying they still wouldn’t want to pay. But anyway, some days are just better than others.
In my stupor, I wasn’t about to make dinner. Thankfully, Mom was on it and on a mission to fix my grill that’s been broken since December. She figured out there was a battery in the ignition button that needed replacing. One battery later and voila! We had grilled chicken in minutes. I can’t tell you how much I missed my grill and now that it’s finally getting cooler in Phoenix I will be a grilling machine. I made her Blueberry Lemon Greek Yogurt Breakfast Cookies the next morning. I think that’s fair trade, don’t you?
Now let’s see some food! If you’re new to Skinny Fitalicious, What I Ate Wednesday is a post I do every week showcasing my meals from one day. It’s fun to see what other people eat in a day. It’s also great motivation for me to eat balanced and create more delicious recipes!
Breakfast. Eggs whites, turkey bacon & a pumpkin coconut pancake loaded with strawberries.
Lunch. Tuna, sprouts & mustard on a gluten free wrap with a side of broccoli. I migrated away from my usual salads because I haven’t been able to get to Trader Joe’s for my favorite kale. I’m really picky about the kind of kale I buy. Too many doctor appointments, therapy visits, lawyer and insurance calls. It’s been crazy!
Snack. Pumpkin gingerbread smoothie. This is an oldie, but a goodie!
Dinner. Grilled chicken breast, peas, sweet potato fries & roasted garlic cauliflower mash. I made the cauliflower mash the day before. Mom made the rest. There sure is nothing better than grilled chicken!
Snack. Pumpkin peanut butter chocolate chip cookie. I’m on my third batch of these.
