I’m back to the grind today. Ugh…do I have to go?
Thankfully, it’s a short week. I can remember a time in my life when I never could imagine myself retired primarily because I had no idea what I would do with myself. I thought I’d be too bored, which is still true today. The difference is now I have so many aspirations and hobbies I can stop myself from trying to do them all at one. But let’s be real. I probably will never be able to retire with how expensive it will be by that time so I may as well stop dreaming and get back to this regularly scheduled blogcast.
So it’s three days into September and I’m going already going through August withdrawal. I don’t want the summer to end! Let’s take a moment to reflect on all the beautiful things that happened in August.
I love reflecting on all the pretty things that made their way out of my kitchen the prior month. Sometimes I need the affirmation that it really happened. When I started blogging, I never imagined I would be do more food blogging. I’ve always loved cooking, but never knew it would morph into so many things. I’m so glad it did though because I’m loving it and I can’t wait to use my new camera more for it.
Last weekend’s extra long weekend gave me the opportunity to do what I love most. Spend time in the kitchen creating healthy & delicious recipes. So in [What I Ate] Wednesday fashion, I’m giving you a preview into this month’s goodies with what I created and what I ate.
Breakfast What I Ate. Fresh strawberries & Easy Eggs Muffins with green bell peppers and hot sauce.
What I Created. Chocolate chip cookie dough oatmeal….need I say more?
Lunch What I Ate. Homemade acai bowl with granola, blueberries & Skoop.
What I Created. Avocado blueberry muffins. Not a recipe fail, but not a recipe love. This one needs more work.
Snack What I Ate. Pineapple melon smoothie with a healthy serving of hemp seeds.
What I Created. Cranberry buzz smoothie…I cannot wait to share this one with you guys. It’s from Mom too!
Dinner What I Ate. Roasted asparagus & baked sablefish from Sizzelfish topped with strawberry balsamic glaze. Sizzelfish sent me a ton of fish. I’m slowly making my way through all of them. I swear I’m part fish. I could easily eat fish every single night. That’s probably why I like swimming so much!
What I Created. Strawberry balsamic glaze. I had a thousand strawberries in the freezer & there’s just something amazingly delicious about mixing berries & balsamic. Tart & sweet.
Snack What I Ate. Zucchini fritter from the freezer.
What I Created. Cashew peach butter muffin tops. I made these for a friend to bring her on our shopping day. They turned out so pretty I couldn’t resist snapping a few pics.
