Happy What I Ate Wednesday!
Wow, that’s a mouthful of a title! I’m full of randomness today. Please excuse my mindless ramblings before we get to all the food.
So I think I finally found the way to reaching my Facebook followers. Videos. Apparently people really like them and food (haha). The video I posted last weekend of myself was my best performing post ever on Facebook. It made my Pumpkin Almond Chocolate Muffins a really long distance runner up. After seeing those stats, I loaded it onto my You Tube channel. Guess I will be working on my vlogging.
Now I’m a proud owner of cankles. This happens at night when I’m in sleeping doing absolutley nothing or after standing in one place too long like cooking or sitting driving on the commute home. It’s doesn’t happen during or after exercising. All reasons that make no sense for swelling. The good news is the tendinitis pain is almost gone. I still have some burning in the arch and tingling in my toes. The tendon pain has calmed down enough for me to walk better and even jump again.
The other good news is I saw the podiatrist Monday and he didn’t see signs of heal re-injury from the stress fracture earlier this year. He actually suspects a pinched nerve is causing this and ordered a test to figure out if it’s my spine or ankle where the nerve is pinched. You may remember my calf phenomena awhile back. I’m still seeing the chiropractor for treatment. I had one last week. My lower back has felt weird these last few weeks. Things are still moving around and healing in there. When I sit too long or lay the wrong way, things get juggled around. How much you wanna bet this is my back? I swear I’m the only person these things happen to.
Last weekend after a three months hiatus from spin, I went to my first class. I took a break to let my calf heal from the pinched nerve in my back. My ankle didn’t like the downward petal pushing motion at all. I did spin while I was recovering from my foot injury and it never bothered my foot not the same story for the ankle. Guess I’ll be sticking to the elliptical. It likes that.
Last weekend I watched the entire Twilight series. Thanks to my cankels, I’m now planted on the couch all weekend instead of doing the things I love. Over the years, I’ve caught bits and pieces here and there. I never knew Bella had two men fighting over her. I was surprised how really good these movies were. I didn’t like the ending though. There better be a sequel. As you can tell, I never watch TV.
After my swim the other day, a woman my age was changing next to me. She asked about my gym bag. I told her I got it for a review because I’m a blogger and work with brands. She said how cool it was and wanted to know the name of my site. I told her the name and was completed shocked when she told me she loved the name. I’m not sure why I was shocked, but I was. I told her I haven’t told anyone at my gym because the regulars only know me for my injury. Then she said the nicest thing to me “you may be injured, but you’re beautiful & you’re injury didn’t take your beauty away from you.” I was blown away that someone who only just met me gave me such a kind felt compliment. It made my day for some days after. Sometimes the most unexpected things happen in the most unexpected places. Give a stranger a compliment today. They may need it more than you know!

Breakfast. Stir fry egg scramble
Snack. Apple, celery & almond butter. I’ve been attempting the Whole 30 plan the last 3 weeks. Giving up fruit wasn’t something in my DNA though. It’s probably more appropriate to say I’m eating Paleo. One of these days I’ll tell you guys more about it. For now, I will say this. I didn’t start eating this way to lose weight, but to help with my digestive issues. So far, I’ve had excellent results.
Lunch. Green & red sautéed bell peppers and a Trader Joe’s mahi mahi tuna burger. OMG…these burgers are incredible. I bought them a few weeks ago and forgot they were in the freezer. Best impulse buy. Trader Joe’s never disappoints.
A few bites of al fresco spicy pumpkin spaghetti squash. Recipe creating requires testing.
Dinner. Healthy, low-calorie chicken parmesan (with almond flour) and tomato spaghetti squash. This is a new favorite dinner of mine. I had a huge spaghetti squash. Enough to make two meals for the pumpkin spaghetti and this. I need to start making dinner earlier though. The days are shorter now which means less daylight for photos. Thankfully I was able to snap this right before the sun went down.
Treats. Today is a potluck at work so of course I made treats. Double chocolate banana muffins and Paleo pumpkin bars. I didn’t test these. I sampled the batter. I know they’re good.
