Happy Wednesday Friends!
As you know, last weekend I was in Tucson for a memorial and spent time with friends. I stayed with my friends Kevin and Colin. It was great being back to the place I lived so long before moving to Phoenix and seeing familiar faces. It was especially awesome seeing my beastie Sarah even it was an unfortunate situation bringing us together.
We hadn’t seen each other in over a year and I don’t know about her, but for me it was so refreshing to see someone who knows me as well as I know myself. I realized during this trip how much I really needed my friends after everything I’ve been through. I broke into tears when I saw her. All the built up emotions from a year of hell overwhelmed me and the memorial atmosphere brought it on too. I was finally able to talk to someone about what I had been going through and felt safe doing it because I know how much she cares about me and I feel the exact same way about her.
And for those of you wondering, I drove by my old house. It wasn’t this amazing house I remembered. In fact, it looked like an old lady house. The water fountain I installed in the backyard was transplanted to the front and turned into a flowering pot. I can’t even begin to tell you how that killed me, but it made me appreciate my new home so much more. With that, let’s see the food!
If you’re new to Skinny Fitalicious, What I Ate Wednesday is a post I do every week showcasing my meals from one day. It’s fun to see what other people eat in a day. It’s also great motivation for me to eat balanced and create more delicious recipes. This is a roundup of what I ate Saturday while visiting Tucson.
Breakfast. Chef Kevin made me fancy hazelnut coffee in his fancy espresso machine. Then he whipped up egg whites, turkey sausage and toast with yogurt butter for me. Am the last person on the planet to know about yogurt butter? Yum! P.S. It was really awesome having someone else cook for me for once!
After breakfast, I headed to the gym for a late morning sweat-sesh. The boys kept me out waaaaaaayyyyy past my bedtime Friday night. Sleeping in was no question. It doesn’t matter what time you get to the gym as long as you show up! P.S. My old gym had new ellipticals, they were weird.
Lunch. A beautiful, brand spanking new Whole Foods was built right after I moved so of course I had to pay that place a visit.

Then Kevin showed me his turtles and I showed him my orange, but I didn’t share.
I brought him low fat zucchini chocolate chip muffins.
Dinner. I wasn’t that hungry so I swung by Sushi Garden for something light. My friends had plans to go out that night and although they invited me to go with them, I was just too tired. I ordered salmon sashimi and lollipop roll with a blue moon. Something about this meal bloated my stomach. I suspect I have intolerance to gluten despite having a biopsy a few years ago that tested negative. P.S. If you’re ever in Tucson, Sushi Garden has the best sushi in town.
Dessert. I treated myself to the best gelato in Arizona from Frost. I always order half pistachio, half hazelnut.
I miss Tucson and hope to make it my home again someday. You just don’t get these views in Phoenix.
