Happy Wednesday Friends!
It’s been a little frazzled here this week. Mom is leaving this weekend and we’re trying to get organized for it. Between doctors appointments and therapy, we’re trying to make sure things are done – laundry, car service, gas, garbage, groceries, meals, etc. It’s crazy all the things you take for granted when you don’t have two hands. Depending on how things go with the doctor tomorrow, she may or may not come back. I have my eight week checkup. I suspect the doctor will tell me I have to be on crutches another four weeks because that’s what she said the last time I saw her.
So after the doctor and seeing how things go next week alone, we’ll talk about whether or not she’ll come back for a few weeks. I hate being an inconvenience like that, but I’m scared about regaining my strength the next two months. I know from experience jumping into my day-to-day life too soon is a recipe for disaster. It will either delay my recovery or cause another injury. But sometimes you have to swallow your pride & ask for help.
Now let’s checkout my eats! These are my meatless Monday eats. If you’re new to Skinny Fitalicious, What I Ate Wednesday is a post I do every week showcasing my meals from one day. It’s fun to see what other people eat in a day. It’s also great motivation for me to eat balanced and create more delicious recipes!
Breakfast. Scrambled eggs whites & peas, turkey bacon & an Apple Cinnamon Greek Yogurt Pancake.
Lunch. Butternut squash cranberry salad. I’m so glad squash season is back. Give me squash everything!
Snack. Citrus Pineapple Melon Smoothie. I forgot how much I love this smoothie! It’s been a few weeks since I’ve had it. It’s so unsuspectingly good!
Dinner. Vegetarian split pea soup.
