Happy Wednesday Friends!
It’s a happy day today! It’s my last day of the work week as tomorrow I’m heading to Denver for Fit Bloggin’. The opportunity for me to go opened up at the last minute and I couldn’t say no. I’m thrilled to be going. I can’t wait to see old friends and meet new ones too. If you’re going, be sure to hook up with me!
I have one more piece of exciting news today. I’m a LOVE Grown Foods ambassador! You may have noticed the new badge I’ve been sporting on the blog these last few weeks.I was overjoyed when the company reached out to me asking if I’d represent them. I’m obsessed over their deliciously healthy goodies. But what I love most about them is their passion to educate children about food. What to eat, when to eat and promoting real foods like fruits, vegetables and whole grains.
Although I don’t have children of my own, I personally feel very passionate about the lack of nutritional education in schools and believe it contributes to the growing obesity problem. We need more brands like LOVE Grown Foods promoting healthy living and I couldn’t be more honored to help them in spreading the LOVE. In fact, today we’re going to Spread the Love with a little something special for you guys at the end of this post.
Now with that good news, let’s get to the food! If you’re new to Skinny Fitalicious, What I Ate Wednesday is a post I do every week showcasing my meals from one day. It’s fun to see what other people eat in a day. It’s also great motivation for me to eat balanced and create more delicious recipes!
Breakfast. Egg whites, turkey bacon and peas. I haven’t had peas in I don’t know how long. I usually use them for icing my injuries, but since I was out of all the other vegetable suspects I was left to consume them which is probably good. I’m not sure how long they were in my freezer. They sure didn’t disappoint. Give me eggs and peas everyday I will be happy. “Yes, I will have green eggs and ham Sam I am.”
Lunch. Tuscan Kale Salad with a grilled ahi burger.
Snack. Homemade acai bowl with blueberries, hemp seeds & chia seeds. Banana omitted because I didn’t have any. I used greek yogurt instead. My new doctor has me seeding cycling for my estrogen issue. Seed cycling is believed to naturally reset hormones. That means I have to eat a lot of seeds. I mean A LOT. Good thing I like every nut on this planet!
Dinner. Leftover crockpot chicken burrito bowls. You guys. I am a genius! So it’s been too hot to cook dinner so lately I’ve been making a lot of my dinners in the crockpot. It’s so easy and it keeps the house cool too! #winning I think people correlate crockpots with winter, but I say they’re better used for summer when it’s hot. I really could use a nicer and maybe little bitter one though. Mom! Christmas!!!
Snack. Bowl of the NEW Love Grown Chocolate Joy Mighty Flakes with almond milk. OMG. These are delicious! Made with beans, lentils, rice, coconut & cocoa they’re loaded with whole grains and only 100 calories for a serving. Great for breakfast or a snack!
