A quick health update today! Last week I saw the new surgeon and he’s definitely the one. He’s the first who’s told me I need surgery and to stop waiting. He agreed my other injuries are from joint instability. I could never get other doctors to say that.
He also said he’s never seen a patient as active as I am with so much damage. Well, actually he said I’m a miracle and doesn’t understand how I have so little pain, have done multiple half marathons and am still able to do so much activity despite everything I’ve been through. I explained to him staying active has been key to managing this and when I don’t workout, I am stiff and have arthritic pain.
So surgery is scheduled later this summer and as much as I don’t want to go through with it, there’s no turning back. I want to be free and live a “normal” life. The good news is his surgery is anterior meaning the recovery is 2-3 weeks (posterior is 6). It’s also outpatient which is a huge bonus! Not having people ask me anymore why I limp will be a bonus too. I’m tried of being treated as if I’m less than human.
Now let’s see what I’ve been eating! This deliciousness is from Memorial Day. If you’re new to Skinny Fitalicious, What I Ate Wednesday is a post I do every week showcasing my meals from one day. It’s motivational to see what other people eat in their day and also inspires me to eat balanced and to continue creating more delicious recipes for you!
Breakfast. My usual Vega protein shake.
Lunch. A tomato gorgonzola chicken salad. This recipe is coming next week and does not disappoint!
Snack. A few hours later I snacked on garlic parmesan hummus and carrots.
Dinner. Roasted asparagus, a zucchini fritter similar to this recipe and Jennie-O recently sent me a package of goodies with turkey burgers so I grilled them and topped with avocado and mustard. I still don’t love avocados but mustard tricks me into eating them.
Snack. Before bed, I had strawberries with Greek yogurt, hemp and flaxseeds.
