Hi Friends! Happy Wednesday!
My refrigerator is making me crazy! It’s so unorganized. The OCD in me just want to take everything out and organize it. Every time I open the doors I feel overwhelmed like I’m about to climb a mountain on crutches. Now that Mom’s here, it’s literally bursting at the seams. I can’t open the freezer and the pantry is stuffed, but thankfully the pantry is huge. She buys 3 or 4 of the same thing like she’s stocking up for a famine. She forgets how really small it is then when she gets home from her shopping extravaganza acts surprised when nothing fits.
My previous house in Tucson had a really big refrigerator and I really miss it. My new house has this itty bitty slot for it and a bigger one just would not fit. I cannot imagine what families do that live in my neighborhood. I think I need a bigger refrigerator. What do you think? P.S. it makes me nuts when she puts the fruit in the veggie drawer. They’re not meant to be mixed. It’s like nails on a chalkboard.

Breakfast. Fried egg whites, leftover brussels sprouts, protein pancake and turkey bacon. Almost my favorite post workout meal. Pre-breakfast, I had an un-pictured Vega protein shake with water and another egg white. Sometimes I just can’t wait for the real breakfast.
Lunch. Tuna, broccoli and kale salad and mustard is back! I almost wrote mustard is the new black. Ha!
Snack. A watermelon pineapple peach sorbet that was stashed in the freezer for a rainy day. BTW taking a selfie on crutches is hard.
Dinner. Crockpot chickpeas & veggies. This looks fancy, but the crockpot makes it easy. I made this the weekend Mom flew in and we had leftovers all week long. She couldn’t believe how simple & delicious it was. Recipe coming next week!
Snack. A grain free 4 ingredient chocolate chip cookie. I haven’t made these in forever. It should be a crime not to make these. So good, so healthy, so easy!
