Welcome to another Wednesday! A few updates on my injuries before we get to the food. First, two giveaways going on this week. Remember to enter them here and here. Second, as many of you know, I had some disappointing news last week about my right leg and I’m still dealing with a nasty tear in my left foot. To say I’m bummed about everything, would be a huge understatement. I’ve received so many emails and love from readers. It’s truly blown me away. Every one of them have brought a smile to my face. I mean some of my friends haven’t even done those things. I really appreciate every one of your love and support and for that I thank you!
Something else I appreciate is my Mom. She flew in last weekend to help me as I’m recovering. Last year I was helping her recover from her heart surgery. Now this year she’s helping me recover. It’s really nice having someone especially when you’re on crutches. Not to mention, there’s just something nice about having your Mom take care of you, no matter how old you are. <3
Now let’s see some eats. If you’re new to Skinny Fitalicious, What I Ate Wednesday is a post I do every week showcasing my meals from one day. It’s fun to see what other people eat in a day. It’s also great motivation for me to eat balanced and create more delicious recipes!
Breakfast. Scrambled eggs, peas, turkey bacon and a protein pancake. This is my perfect post workout meal. It has the right balance of protein, complex carbs and fat. After an hour of laps in the pool or lifting weights, this is all I dream of.
Lunch. Kale, tuna, homemade blender salsa and broccoli.
Snack. Strawberry kale smoothie. I’m obsessed with smoothies lately, but you have to be careful with the ingredients otherwise the calories get out of control. Lately I’ve been rotating between my favorites which are cherry Greek yogurt, watermelon peach pineapple, citrus pineapple melon, skinny strawberry frappuccino and this new kale one.
Dinner. Mom took me out to dinner to my favorite place Pita Jungle. Sitting in the restaurant was not the most comfortable in a leg brace, but the food was so worth it. I ordered the spicy chicken wrap sans the wrap. I really need to deconstruct the recipe for this one of these days.
