Happy Hump Day!  Is it the weekend yet?  I’m ready for it now.  Last weekend my a/c went out around midnight one night.  Did I mention it was 100 degrees in Phoenix too?  Is it just me or does it always seem like smoke alarms and a/c units go off in the middle of the night?

Last year I bought a new home in Phoenix and my a/c has gone out at least 3 times.  Good thing I bought the extended warranty! So anyway, I didn’t get much sleep until it was fixed Monday because I was sleeping in an oven all weekend.  Now I’m dragging a little this week.  BUT still hitting the pavement every morning.  Today I mixed things up with a spin class and weight training to give my legs a break.  

Now for my Wednesday eats.  I’ve been thinking a lot about my Wednesday posts. I would like to turn them into meal plans for you guys and post them on my site like I do my recipes.  Thoughts?

Breakfast.  An egg muffin.  I’m obsessed with making these.  Eggs are wonderful baked. They become light, fluffy yet dense like a muffin.  #eggmuffin

As you know, I like to play with my food.  I love that I can be creative with these egg muffins and add different ingredients.  For these, Iadded brussels sprouts, red & green bell pepper and drizzled it with sriracha hot sauce.  #spicyfoods #Srirachasauce

Snack.  Banana sushi.  Banana with espresso hazelnut butter, fresh berries and chia seeds.  I needed potassium refuel after all the miles I’ve been logging on the pavement now that I’m recovered from my foot injury.  Potassium is good for recovery because it balances electrolytes and prevents muscle cramping.  Cramping is something I’ve had a lot of these last weeks.

Last weekend I saw this at the market for the first time ever and had to buy it.  This has almonds, hazelnuts, ground espresso and dates in it.  I’m working on a gluten free muffin recipe.  That’s really why I bought it.

Lunch.  Mixed greens, kale, steamed green beans, leftover black lentils, cracked black pepper and cilantro lime dressing.  This was one of my favorite salad combinations yet this year.  #eatyourgreens

Desert.  Grain free zucchini walnut bread.  Fresh out of the oven.

Dinner.  Dr. Praeger’s TexMex black bean burger.  I grilled my burger and wrapped it in red cabbage with spicy mustard.  I’m all about cabbage suddenly.  Pretty sure it’s the color.  It’s almost pink!  #pinkismycolor  #myveggiesreflectmyfashion

I bought Dr. Praeger’s at Whole Foods last weekend.  I’ve been playing around with making homemade veggie burgers, but haven’t perfected the ingredients yet.  I thought I would give these a whirl since I don’t have a lot of time this week to cook.  

The verdict? The Kale burger was yuck.  I didn’t like the consistency, but the TexMex was delicious!

I love the ingredients in these.  No added gunk.  Yes, I’m THAT lady in the store reading food labels.  My question is why isn’t everyone else?  #ingredientreader #obsessed   I always read ingredients.  It’s an indication of how healthy a food is.  Rule of thumb.  If you can pronounce the ingredients and know what they are, you have a green light.

These burgers I will be buying again…until I perfect my own recipe that is!

With my burger, I made carrot & jicama fries and had a side of greek yogurt for dipping.  Holly yum!  I could have eaten the whole plate, but I didn’t. When I told my Mom about my fries she said “who thinks of making carrot and jicama fries???”  Haha, I do!  

Speaking of Mom, she’s doing recovery very well since her heart surgery.  It’s been 6 weeks now.  Last week she drove for the first time and this week she starts cardiac rehab.

    I ALWAYS read ingredients labels!!! It’s actually kind of fun for me, however it’s also pretty depressing because a lot of foods I really want to eat…. Have crummy ingredients!

    The beauty of baked eggs is adding everything to it- but even better when topped with sriracha! I sometimes read ingredient label of some packaged foods because I never will forget buying bread which said ‘all natural’ when I visited America and it had HFCS in it!

    Hi!!! I am really loving these posts–great inspiration to try new things! What is your recipe for the zucchini bread? I also love egg muffins! Sometimes I make them on Sundays for the whole week, they make a great grab and go breakfast!!
