How’s the day going? It’s sunny as usual here in AZ. <3 I owe you guys an update on my Mayo Clinic visit last week.
I was there forever. First I checked in early for an x-ray appointment, but when the x-ray technician brought me back and told me it was for my foot I questioned it. Not only did I have a disc with my MRI’s and x-rays, but I also just had an x-ray last month on the foot and ankle. I’ve had a lot of x-rays since my injury in January and don’t want to be exposed to more radiation. I know nothing’s broken and the problems I’m having won’t show up on an x-ray anyway. So I put my foot down and said no I’m not having an unnecessary x-ray. After they examined the disc, she told me they saw my scans and although they were not as good as theirs, I could skip the x-ray.
Then I waited 3 hours to see the doctor. My appointments were spread out and this was the closest they could get them together. Luckily I had my computer and food with me. When I finally saw the doctor, he informed me their systems were down & couldn’t read my scans. Instead we went through my medical history. He was amazingly detailed and thorough. He hung in there while I went through every detail of this year. No other doctor has taken the time to go through my history and understand what’s happened like he did. I was impressed. He then did an evaluation of my walking and strength, which was all good. A few weeks ago it wasn’t. I couldn’t even stand on my right leg.
Then we talked about my ankle problem. He felt surgery for inflammation from the sprain would further complicate things and that even though it’s taking a looooong time to go away if I’m consistent taking anti-inflammatories it should go away. Thankfully I’m not having much pain. It’s more discomfort in the afternoon. I also have tendonitis which I already knew. We talked about the fact that I was in the air cast for almost 4 months. He said that being immobilized that long weakened the supporting tissues and he suspects it also changed the biomechanics of how I walk.
Even though I’m getting stronger working out on my own, he’s concerned I may hurt myself if I’m not doing enough strengthening of the tissues. So that means back to PT for awhile. This time I’ll be at Mayo Clinic. There’s a location near my house and he’s set me up with a therapist who’s a marathoner and a friend of his.
As far as fitness, he told me I can continue with the things I’m doing including swimming, stairclimber, elliptical and walk/run method. I’ve been power walking the last 2 weeks. I can already tell a difference in leg strength from that and doing stairclimber. Friday for the first time I was able to run on the treadmill. I’ve tried before, but something always hurt or felt weird and I had to stop. This time it was like my legs just worked. It was only 2 miles. I was slower than a turtle. Seriously I can walk faster at this point. Right now all I care about is getting stronger and saying good-bye to pain forever. I’ll take the small wins where I can get them. Breakfast. Shaved brussels sprouts egg frittata. Shaved brussels sprouts are from Trader Joe’s. Love those!
I also had spaghetti squash hash and raspberries. A reader gave me the idea to use it as hash and at first I thought it was gonna be iffy, but it turned out delicious even looks like has browns. By the way, I’m not trying to trick myself into eating veggies. I just like getting creative with my food.
Then I was majorly craving a Starbucks peppermint mocha. I usually treat myself to one on my birthday, but didn’t this year and I wasn’t about to run out for one. So I got fancy and made my own skinny version and it was delicious! Tasted just like a Starbucks one. Recipe will be up the end of this week.
Lunch. Leftover turkey and tomato spaghetti squash “pasta” and yes, I’m still eating turkey. This week is the last of it. Leftovers on on lunch salads are the best. I’m kinda sad the leftovers are done because now I have to cook. I may need to eat out for awhile until I get my holiday shopping done.
I also whipped up a green juice and had an apple. I hadn’t made a juice in…I don’t know how long. It’s seriously been forever and I’ve been craving one. I just didn’t want to deal with cleaning the equipment. I think I really just needed an excuse to use my super cute holiday mason jar I snagged at TJ’s for $3.
Dinner. Vegetarian Black Bean Chili and Vegan Pumpkin Cornbread Muffins. Crockpot chili is the best meal on a gloomy, cold winter day. Now I have chili to hold me over a few days. Thankfully it’s freezes well. I actually found a bowl buried in my freezer from last winter in a mound of freezer burn. I have a lot of muffins in there. I better make sure I don’t let those go to waste.
Then I baked a TON of muffins and brownies for the office peeps and for once, I didn’t eat any unless you count licking the batter?
