Happy Hump Day! How’s the week going? I’m still recovering from vacation hangover.
Some of my funk is food coma from all the recipes I created over the long weekend. Don’t worry. I wasn’t Sally Baker ALL weekend. I actually got out of the house quite a bit despite these annoying leg cramps I’m still experiencing from my foot injury.
I did a 4 mile race, watched fireworks, had a sports massage, worked out for 3 hours a day, went to a step aerobics class (totally random), popped in at different juice bars and shopped with a friend. LOTS of SHOPPING. My bank account is thanking me for going back to work this week.
But I digress. Today is about food so let’s talk 4th of July eats.
Breakfast. Crustless asparagus & garlicky spinach quiche. I diverged from my usual Easy Eggs Muffins. I bought these cute individual quiche dishes shopping with my Mom so of course I needed an excuse to test it out. The quiche actually had mushrooms too, but it doesn’t sound good in the name. Plus mushrooms are like onions. They don’t need a special call out unless they are the only ingredient.
Mid-Morning Snack: A banana and Greek Chia Parfait. This stuff is addicting. I’m sure I went back for seconds. Maybe thirds too.
Lunch: A green juice. I’ve been experimenting a lot with juicing since getting back from Wisconsin. I haven’t had much of an appetite lately so I’ve been juicing to ensure I am getting enough vitamins. This is crucial for my recovery and those leg cramps. Just one problem. I don’t own a juicer so I’ve been using my Ninja to green. I haven’t been able to talk myself into buying one yet. Operative word –> yet.
Appetizer: Tomato Watermelon Salad. I’m not sure why I rarely eat watermelon. It’s not in my fruit rotation. I always have it on the 4th of July though. I probably should eat more of it. Watermelon aids in muscle repair and soreness.
Drink: Blueberry Mint Spritzer. It’s very rare that I have a “drink” and when I do, it’s usually a beer & a holiday. Last year I’ stopped drinking. It reminds me too much of my ex and I just don’t need
him that in my life.
Dinner: Grilled chicken breast, fresh green beans & sweet potato chips. It was a steamy 105 degrees. I considered baking the chicken in the oven, but there’s something so good about chicken on the grill. With the heat, I swear the chicken would’ve cooked even without a grill. It doesn’t help either that my courtyard gets afternoon sun. Reminder to self. Put a canopy over the grill this summer.
Desert: More watermelon and an almond banana bread muffin. I’m thinking a muffin food truck is in my future. Who’s in?
