Happy Wednesday Friends!
First I would like to thank you guys for the sweet birthday wishes this week. You blew my socks off with all your comments, posts, tweets & grams. It really made my day! Remember to enter the Starbucks giveaway and Birthday giveaway if you haven’t already. Both are open through the week and it’s the least I can do to thank you.
I wish I could say my computer was a gracious as you guys. As I type this post I’m wondering why I haven’t yet bought a new computer. Last weekend I had problems after installing Apple’s latest OS El Capitan update. The files in the download were corrupt. From Friday until Sunday, I worked with Apple support to get my MAC working again. It was ugly. I swear Apple infests bugs in their updates to force people to replace their products. Also, PicMonkey no longer saves in Safari with this new update. So if you’re a PicMonkey user, use Chrome instead. I swear if it’s not one thing, it’s another. Technology I hate you, but I can’t live without you.
Now let’s see some food! If you’re new to Skinny Fitalicious, What I Ate Wednesday is a post I do every week showcasing my meals from one day. It’s fun to see what other people eat in a day. It’s also great motivation for me to eat balanced and create more delicious recipes!
Breakfast. Egg whites, turkey bacon & a butternut squash pancake with blueberries.
Lunch. I still don’t have a big appetite since surgery and I can’t smell anything so my meals have turned into small snacks throughout the day like these roasted vegetables. During the winter, I like having vegetables on hand throughout the week to have with lunch or dinner.
Snack. Greek yogurt with strawberries and a brittle I may or may not be testing out.
Dinner. Chicken lentil soup with black rice. I’m so glad I made a huge pot of this before surgery. It’s been a lifesaver!
