Happy Wednesday Friends!
I have one announcement to share with you guys. My new website is finally done! My site will be down beginning at 8:00 pm EST tonight for about an hour. I’m so excited for you guys to see it tomorrow!
With that, it’s Wednesday and that means it’s time to talk eats.
Yesterday I traveled home from Wisconsin where I had been visiting my parents. Before this year, Wisconsin would have been the last place I would have ventured off to for vacation. Not because I don’t love hanging out with my parents. They’re actually quite comical. I feel like I’m in a sitcom when I’m with those two.
Things have been rough this year. With my foot injury in January, Mom’s emergency heart surgery & blood infection in March and my emotional roller coaster in April. I needed to come back and reset. Today I’m sharing some of my eats while I was there and what I was thankful for.
Breakfast. Dad & I took Mom to her favorite restaurant, Grapevine Cafe. It’s a quaint little place with a friendly bistro atmosphere. It’s cute, quiet and the food is simple yet tasty. It was Mom’s first time there since her surgery. I had the veggie omelette with egg whites, whole wheat toast and orange slices. I am thankful I was there for her first time back at her favorite hangout.
Lunch. Smoothies, smoothies and more smoothies. Remember when I said I bought a Ninja? Mom bought one too! Except hers is much larger than mine. It’s quite large in fact and has the single serve attachment which is great for whipping up individual smoothies and juices. We used it every day. Very Berry, Green Detox,Orange Julius and Raspberry Goddess Smoothie were a few of the contenders. I was thankful I was able to share my healthy recipes and teach Mom a thing or two about smoothie mixing.
Dinner. Mother-daughter dinner at A’Bravo. It’s another cute little bistro in town. One thing I actually like about Wisconsin are the number of small local eateries. It’s refreshing to eat somewhere that offers a unique menu with an array of local ingredients. Where I live, it’s mostly chain restaurants which I’m not a huge fan of. I had the Thai Chicken Stir Fry. It had an amazingly sweet peanut sauce and fragrant jasmine rice. I also loved the heaping mound of salad on the side. I was thankful for our mother-daughter time. Living far away, this is something we rarely get to do.
Snacks. I whipped up a batch of my greek strawberry shortcake muffins. Mom bought a zillion strawberries at farmers market so we used them in this recipe, in the smoothies we made then froze the rest. These gems topped with some Reddi-wip are like heaven! I was thankful for my baking skills. Seconds were enjoyed by all. Honestly, I’m not sure who couldn’t resist for just 95 calories.
I’m thankful I was able to spend a few days with Mom. I’m so impressed with how well she is recovering & the dedication she is giving to working out everyday and eating heart healthy. I’m thankful she is healthy and getting stronger every day. I’m thankful someone was watching out for her.
I’m thankful for the time away from work, the time to rest, rejuvenate and relax. And now…I’m thankful to be home 🙂
