Happy Wednesday Friends!
I have exciting news. I BOUGHT A NEW CAR! I thought about what you guys said last week about my car dilemma and what Mom said about eliminating the added stress in my life from my other car always breaking down and decided to buy a new one. When I make my mind up to do something, I’m bound and determined to get it done right away before I talk myself out of it. Who buys a new car on crutches? Only me… It’s torture not being able to drive it everywhere.
I already knew what I wanted because I had been doing some investigating before the car accident. Then, as chance would have it, I stumbled upon a pre-certified 2015 on the internet. Mom took me to see it and that night I owned a new car. It was a killer deal and for the low mileage and extended warranty, I would have been a fool to have said no. Now I can scratch new car off this year’s Christmas list.
What’s ironic is that in my attempt to make my life less complicated by buying a new car, it ended up more complicated because now I own not one, but two cars. Yes, you heard me right. I still have the other car. As I was contemplating the trade-in, Mom through a curve ball saying she wanted the other car to drive when my parents are here during the winter. It ended up working out because the dealership offered me next to nothing for a trade-in. Apparently when a car goes out of business, no one wants them anymore. Now I may as well drive it until it dies.
In other not so happy news, my best friend is having a mastectomy today. When I heard the news, I felt so incredibly sad. It’s not fair that anyone has to go through that. Then I reminded myself how lucky she is that it is not cancer and it was caught before it became worse. Still, it hurts me deeply knowing she is going this and that I can’t bring her a batch of recovery muffins. Life really is fragile.
Now let’s see some pretty eats. If you’re new to Skinny Fitalicious, What I Ate Wednesday is a post I do every week showcasing my meals from one day. It’s fun to see what other people eat in a day. It’s also great motivation for me to eat balanced and create more delicious recipes!
Breakfast. Egg whites, turkey bacon, protein pancake and strawberry sprinkles.
Lunch. Kale salad with steamed broccoli, tuna and homemade blender salsa.
Snack. No bake dark chocolate almond coconut bar.
Dinner. Blueberry almond baked salmon, green beans and brown rice. I was bored with my usual salmon lineup so I tossed together a citrus dressing with blueberries and almonds. Holly YUM! I even put some on the rice. It was like eating candy.
Dessert. Mango smoothie chia pudding. I haven’t been very hungry since the car accident, but the last few days I’ve been famished. Hopefully, my body’s working hard to fix this fracture. I’ve been trying to fill it with as much nutrient dense goodness as possible. P.S. I see the doctor tomorrow for a 4 week checkup.
