After my parents arrived Sunday, Mom & I kicked off holiday preparations with some wrapping and baking. Dad’s been busy working through his “to-do” list. <3 By the way, these paleo white chocolate pecan cookies are amazing. I wish I could give you one right now. They’re perfectly healthy and sweet.
Speaking of sweet. You guys are amazing. Thanks for all your sweet comments and well wishes on my ankle injury. This week I’m doing so much better. I have almost no pain, no more swelling and can walk in my boot without crutches. It’s only been 1 week. I can’t believe the huge turn around I’ve had since last week.
The bad news is it’s been one week and I can tell already how weak my leg is. On Monday I started PT. My therapist who’s a marathoner was amazing. When she assessed me, she identified the imbalances in my leg are actually due to a college femur injury. Her theory is my femur & hip weaken during my foot injury and it put too much stress on my ankle. I suspected this myself. She gave me a zillion strength exercises to start working things so I’m stronger by the time I’m out of the boot. I’m excited to work with her, but also a bit scared. She’s very pushy and talks really fast.
Crossing my fingers my string of bad luck is turning around. I even won two contests this week. A few weeks ago, I entered Sara Lee #DelightfulPerson contest and was selected as 1 of 45 finalists for my entry about my my weight loss. I was surprised beyond belief when I got the email. Next month the finalists will be voted on and have a chance to win a grand price of $4500. I was so surprised when I got the email. What an honor and Christmas present!
Christmas Eve will be low key around here. I’m off to swim, more PT, working, baking then braving the Apple store for an appointment to get my MAC keyboard fixed that went out last night (wish me luck). Hopefully I’ll figure out what’s for dinner other than muffins while I swim. I still haven’t cooked for my parents since they’ve gotten here. I feel bad about that. I haven’t done much cooking this week with my injury so meals have been freezer meals. Quick, easy yet healthy.

Breakfast. More Butternut Squash Spinach Breakfast Bake, baked cinnamon plantains, raspberries and a health dose of sriracha. I’m obviously obsessed with this. It’s so warm and filling. I also love that I can make it once and warm up leftovers throughout the week.
And a Blueberry Hemp Flaxseed Muffins from the freezer. The other day I was analyzing the blog stats and discovered this muffin recipe is the highest viewed recipe on the blog this year. I knew it was popular because it shows up every day in the stats. I wasn’t that surprised to find it was the best of all the muffins. This is one of my absolute favs. There’s always a stash in the freezer.
Lunch. Mixed greens salad with light tuna, sweet potatoes and mustard drizzle.
With a side of roasted brussels sprouts. I could eat these like candy.
Dinner. A Hilary’s Eat Well veggie burger and a ton of broccoli. I love that I can pull these things out of the freezer, warm up and eat. It makes eating healthy easy.
