Hello Lovelies! Happy Thanksgiving Eve!
Hope you guys are enjoying a short work week or better yet vacation. <3 Are you ready for tomorrow’s feast? I plan on staying home. My friends invited me over, but I just want to be home and rest. Sunday night I slipped down the stairs in my house and landed on my bad foot. I landed on my calf & had gripping achilles pain the next morning. I couldn’t walk it hurt so bad. By the afternoon I was sporting a gorgeous bruise. I don’t know when I’ll learn not to wear socks on my wooden stairs. Last year I fell twice. I really need to be extra careful since my foot & leg seem to be hypersensitive. The good news is I’m feeling better today. Besides the fall, the resting seems to be working. The swelling in my ankle has decreased. Almost back to normal. I’m hoping I can start walking & working out this weekend. I’m ready to be myself again.
In case you still need some last minute Thanksgiving inspiration, here’s a roundup of my favorite healthy dishes and deserts for you.
Now that you have some Thanksgiving eats to drool over, let’s drool over my eats because it’s yet another What I Ate Wednesday.
Breakfast. Butternut squash spinach breakfast bake (I’m obsessed with this…so good), leftover steam veggies and baked cinnamon plantain chips.
Snack. Orange and a pumpkin oatmeal cranberry breakfast cookie.
Lunch. Salad with canned tuna, more steam veggies, roasted sweet potato and mustard. I don’t know what it is about sweet potato, but adding it to a salad is the best idea ever.
Dinner. Skinny turkey zucchini lasagna.
What are you Thanksgiving plans? What are you making or planning to eat? Anyone doing a Turkey Trot?
