Having friends visit is the best.
Having a friend visit who knows everything about you is even better. You can go months, even years without seeing them & you always pick up right where you left off. My friend Jaime was working in Mexico last week and made the trip up to Phoenix to spend the weekend with me.
We’ve been friends for a lot of years; almost 10 years now. We met at my first job out of college & remained friends throughout the years even after I moved on to another company and both of us relocated to new cities. Every year we take a trip together. A few years ago, we started this tradition because all our friends are married and were both complaining that we’re both single & don’t have people to go on trips with anymore. Now we just go together.
I have some friends I could not travel with. Sad, but true. Some people are just not meant to travel together, but Jaime & I strike a good balance. We’re both low-key and like similar things. We’ve made our way around the world together. A few places we’ve been:
This year we didn’t do a trip because of all the crazy things going on in my life. Having Jaime visit me at my new home for the first time was a nice change of pace. We caught up on life, shopping and good food on our short visit. Here’s what we ate!
Dinner. Yardhouse my favorite low-calorie meal – five ounce blackened tuna burger with a side salad (under 500 calories). Jaime spent the morning driving to Phoenix while I was at a photography class (ugh…so much to learn) and we were both starving by the time we met at my house. Yardhouse is 3 blocks from house so we swung by for an early dinner since we both missed lunch.
And one or two of these maybe happened. It’s so steamy hot in Phoenix yet that this felt like the most refreshing thing ever. After drinking, we did what any normal people would do…shop at the outlet mall next door all night. I won’t even begin to tell you about all the money I spent on shoes. I justified to myself that I need better shoes to support my foot since my injury. Lesson learned. Don’t drink and shop.
Breakfast. The next morning I got up early & went to go to the gym for a few hours while Jaime slept in. When I got home, we laughed over coffee.
Then we ate muffins. Flourless pumpkin chocolate blueberry muffins.
This was a random combination that turned out really delicious! Of course, I did what any good friend would do & sent the rest with him to enjoy at work this week. He needs something healthy to balance out the tortillas and flan he’ll eat in Mexico this week.
Brunch. We decided we should eat more than muffins, but got distracted by a house project. One of the outside lights fell out of its socket & we were diagnosing the problem. That’s the trouble with owning a house, something always needs fixing. I’m too scared to get on a ladder with my foot right now so he did it for me cuz that’s what friends are for.
Finally we ate brunch. I had a protein platter – 6 egg whites, chicken, green bell pepper, salsa, black beans & whole wheat tortilla. I nibbled on the beans & tortilla. I’m being paleoish these days. The meal was huge! I couldn’t finish it all. I definitely need to re-create this one pronto.
Jaime had all the stuff you shouldn’t eat and asked me not to tell you. Shhh….sorry Nene!
