Hi Guys! How’s your Wednesday?
Remember my 20 year old blender death last week? I waited a week hoping one would magically appear at my front door. What was I thinking? Oh yeah, I wasn’t. I was working like a dog. So after polling blogger friends, I bought a Ninja Master Prep for $45. I didn’t want to make a big investment at this time until I figure out where I’m going with life and blogging.
Let me tell you. This blender is a power house.I can’t imagine what one that costs more could do. When I get my own cooking show, I will invest in a better one. #ishouldhaveacookingshow #sigh #dream
I love that this blender is simple & multi-purpose. I can blend, chop, process, crush. There’s nothing more annoying than having thousands of kitchen gadgets that do one thing.
Now that I’m hooked up with my new gadget, the recipe possibilities are buzzing through my head faster than I can write them down. #bloggerproblems That means more recipes coming your way!
Since it’s Wednesday, it’s time to share my eats from Memorial weekend. My meals were a little out of the norm. I was testing new recipes and the long weekend meant I was running errands and working out longer so I was off my normal eating schedule. #treatyourself
Breakfast. Gluten free cashew chia pancakes with fresh strawberries and blueberries. A few weeks ago, I found cashew meal at Trader Joe’s a few weeks ago. The verdict? Amazing! Now I don’t love pancakes, waffles or french toast. The flour (i.e. gluten) in them is too heavy for me to digest and an hour later I’m hungry. Without the gluten, I felt full and satisfied enough that I didn’t need lunch. By the way, the cashew meal is very rich and flavorful.
By the way, I had a reader comment last week they do not have a Trader Joe’s where they live. You can buy a lot of Trader Joe’s stuff online and on Amazon.
Lunch. Raspberry Goddess Smoothie courtesy of my new Ninja. My cousin saw this picture on my Instagram. She commented that she thought this had bugs on it at first. I never thought about chia seeds looking like bugs. I don’t eat red meat and I’m not about to start eating it or bugs either for that matter. 😉
Dinner. Grilled asparagus and grilled salmon with blackberry balsamic glaze. I love grilling and this glaze was the perfect extra healthy something to turn a simple meal into something fancy.
I didn’t realize until after I wrote this post that my day was all about berries. Like my zucchini phase, I’m now in a berry phase. When I was a kid, I was allergic to berries and couldn’t eat them for years. Guess I’m making up for lost time now.
Desert. Banana froyo. Love, love, love this new creation! And again here I am with the berries…
